S’mores Cookie Bars

You, heard it— S’MORES COOKIE BARS. Yes, please!

S’mores is a flavor that screams summer to me. It’s full of nostalgia for my childhood. It reminds me of summers growing up in the Midwest. The smells of fresh cut grass and hot asphalt. The regular backyard bonfires and, of course, the requisite s’mores that came along with it. So anytime summer rolls around I am always searching for new treats to incorporate that incredible flavor combination into.

And so, the s’mores cookie bar was born.

This recipe uses the base of my chocolate chip cookie recipe for the bar, which makes this treat, by default, already incredible (if you know, you know). After whipping up a base of the chocolate chip cookie dough, top with the bars with tons of chocolate chips, mini marshmallows, and a bit more of that cookie dough. Finally top with crumbled graham crackers!

When all of that is done, put it in the oven and you have the most magical summer treat. Even in the dead of winter, these s’mores cookie bars will take you straight back to the memories of those summer nights.

With these crispy, crunchy edges and the soft, gooey interior, you’ll be wishing it was summer all year long! Let’s get to making some s’mores cookie bars!

S’mores Cookie Bars

  • Cookie Dough Base
  • 1/2 cup unsalted butter

  • 1/2 cup shortening

  • 1 cup sugar

  • 1 cup brown sugar

  • 2 large eggs

  • 2 teaspoon vanilla

  • 1 teaspoon salt

  • 1 teaspoon baking soda

  • 3 cups all purpose flour

  • 2 cups mini marshmallows

  • 2 cups chocolate chips

  • 1/2-1/3 cup crushed graham crackers


  • Preheat oven to 350. Line a 9″x13″ pan with parchment paper and grease the parchment.*
  • Cookie Base
  • Beat together butter and shortening.
  • Add sugars and beat until light and fluffy.
  • Add eggs and vanilla and mix to combine.
  • Add dry ingredients and mix until just combined and no flour is visible.
  • S’mores Cookie Bars Filling
  • Press 2/3 of dough to bottom of the 9″x13″ pan.
  • Scatter chocolate chips and marshmallows over the dough.
  • Take the remaining 1/3 dough and scatter pieces over the top. Sprinkle crushed graham cracker on top.
  • Bake uncovered for 26-28 minutes, until top is golden and appears set.
  • Cool completely before cutting and serving.**


  • *I highly advise that you grease the parchment paper due to the stickiness of the marshmallows. I just sprayed mine down quickly with some cooking spray.
  • **You should allow the cookie bars to cool for a minimum of 1 hour prior to serving. The cookie base and melted marshmallows are too unstable to serve immediately and keep their shape.
